The Grind & The Origin Ethiopia is not just a coffee-growing country; it is the birthplace of the bean itself. In the high-altitude forests of the Yirgacheffe region in Southern Ethiopia, coffee still grows wild and is harvested by smallholder farmers from their "garden sites." These beans are true Heirloom varieties—genetics that exist nowhere else on Earth. Because the coffee grows at staggering heights (up to 2,200 meters), the cherries develop slowly, packing every bean with intense flavor and a sparkling, tea-like acidity that has made Yirgacheffe the most famous coffee origin in the world.

The Profile: Vibrant, Floral, & Jammy Unlike the Washed process used in our Colombian or Costa Rican offerings, this is a Natural (Dry) Process coffee. The fruit is left on the bean while drying in the sun on raised beds, allowing the seed to absorb the intense sugars of the cherry. This results in a "bright and juicy" cup that feels like a celebration. You’ll find an explosion of Ripe Berries and delicate Florals (think Jasmine or Lavender) on the nose, followed by a clean, sweet finish of Sugarcane. It is a complex, "dynamic" coffee that excels in a pour-over but makes for a mind-blowing, fruit-forward espresso.
