The Grind & The Origin In the southern reaches of Mexico, the Sierra Madre mountains house the El Triunfo Biosphere Reserve—home to the largest cloud forest in Mesoamerica. Our coffee is cultivated in the "buffer zone" of this protected sanctuary by the smallholder farmers of the CESMACH and FTV cooperatives. Growing coffee here is a lesson in patience; the beans are Shade-Grown beneath a lush canopy, protecting the habitat of thousands of species while allowing the cherries to develop a dense, complex sugar structure in the humid, high-altitude air.

The Profile: Bold, Bold, & Earthy We’ve taken this selection to a Dark Roast to fully unlock the heavy, syrupy potential of the Chiapas terroir. This is a cup for those who value depth and "heft" in their coffee. The heat of the roast transforms the bean’s natural sugars into a thick Molasses sweetness, perfectly balanced by the savory, toasted character of Roasted Almond. As the cup cools, you’ll notice a complex finish of Mellow Spices—think hints of cinnamon and clove—that add a sophisticated layer to this classic profile. It’s a bold brew that maintains its integrity whether enjoyed black or with a splash of cream.
